Quick and Easy traditional English Scones
Cake flour 140g
Baking powder 10g
Granulated sugar 23g
Unsalted butter (cold) 35g
Whole eggs 26g
Heavy cream 85g
Vanilla paste 1.5g
Orange zest (optional) 5g
Preheat oven to 450F
Place all dry ingredients into a food processor and pulse to blend.
Add cold butter and pulse until you get small coarse granules.
Mix heavy cream with eggs and vanilla paste.
Then add heavy cream to the flour mixture and pulse until it just comes together, DO NOT overmix.
Flour the work surface and bring the dough together by hand, DO NOT knead.
Roll to desired thickness, about 1" thick, and place on a baking pan.
Egg wash and bake at 450F for about 9 minutes or until golden brown.
Serve with clotted cream and jam.
