Linzer Cookies

Classic Linzer Cookies


  • Unsalted butter 226g

  • Powdered sugar (sifted) 120g

  • Egg yolks 35g

  • Salt 3g

  • Cinnamon 1g

  • Vanilla extract 5g

  • Lemon juice 38g

  • All-purpose flour 313g

  • Hazelnut flour 100g

  • Jam (any flavor) 160g

  • Powdered sugar (optional) Dusting


  1. Cream butter and sugar together until smooth and fluffy.

  2. Add eggs and mix until combined.

  3. Add salt, cinnamon, vanilla extract, and lemon juice, and mix until incorporated.

  4. On low speed, add all-purpose flour and hazelnut flour, and mix just until combined, DO NOT OVERMIX.

  5. Flatten the dough into a disc, wrap it, and refrigerate for at least one hour.

  6. Preheat oven to 350F.

  7. Roll dough to 1/4" thick and cut with desired cutters.

  8. Bake at 350F for 8-10 minutes and let cool.

  9. Spread jam on the bottom cookie layer and cover with the top cookie layer, dust with powdered sugar to finish.

  10. Time to TASTE!!!
