Peanut Butter & Jelly Bars

Scrumptious PB&J Bars in under 30 minutes

Ingredients
- Unsalted butter (room temperature) 113g 
- Granulated sugar 100g 
- Vanilla extract 2g 
- Whole eggs (room temperature) 26g 
- Peanut butter 227g 
- All Purpose flour 187g 
- Baking Powder 2.5g 
- Salt 1g 
- Jam 150g 
- Salted peanuts (chopped) 35g 
Directions
- Preheat oven to 350F. 
- With a paddle, cream butter and sugar together until smooth and fluffy. Scrape the bowl. 
- Add vanilla extract, eggs, and peanut butter and mix to combine. Scrape the bowl. 
- Add flour, baking powder, and salt and mix until well incorporated. 
- Place 2/3 of the dough into the mold and press to an even layer. 
- Spread jam evenly on top of the dough without going to the edges. 
- Evenly distribute dollops of the remaining dough along the edges and in the middle. 
- Sprinkle chopped peanuts on top. 
- Bake at 350F for about 20 minutes or until the surface is light golden brown. 
- Allow to cool before removing from the mold. 
- Time to TASTE!!!
