Unsalted butter (room temperature) 113g
Granulated sugar 210g
Ricotta (Full fat) 212g
Lemon zest 1g
Vanilla extract 8g
Whole large eggs 55g
All-purpose flour 240g
Baking soda 5g
Cream butter and sugar together until smooth and fluffy.
Add ricotta, zest, vanilla and beat well.
Beat in egg, scrape the bowl, add flour, baking soda, and salt, and beat until incorporated.
Cover the dough and chill for at least 2 hours.
Preheat oven to 350F.
Shape the dough into 1" balls, and bake at 350F for 10-12 minutes.
Make royal icing and dip the tops of the cookies into the icing.

Royal Icing Ingredients
Powdered sugar 225g
Lemon juice 13g
Mix lemon juice with powdered sugar until smooth, add milk if needed to reach desired consistency.
