Christmas Sugar Cookies

Cookie Ingredients

  • Cake flour 453g

  • Granulated sugar 140g

  • Almond flour (meal) 104g

  • Unsalted butter (room temperature) 350g

  • Whole eggs 86g


  1. Using a paddle, cream butter and sugar until light and fluffy.

  2. Add almond flour and beat well.

  3. Add cake flour at low speed and mix until incorporated.

  4. Add eggs and mix just until combined.

  5. Flatten the dough to about 1" thick, wrap, and place in the refrigerator until firm enough to roll out, 1-2 hours.

  6. Preheat oven to 350F.

  7. Roll the dough to 1/4" thick, cut with cookie cutters, and place on a baking sheet.

  8. Bake at 350F for 10-12 minutes or until there is a slight golden brown color at the bottom edges of the cookies.

  9. Once cookies have cooled completely, ice and decorate with royal icing.

  10. Time to TASTE!!!

Royal Icing Ingredients

  • Powdered sugar 150g

  • Egg whites 35g

  • Vanilla extract (optional) 5g

  • Food coloring gel


  1. Mix sugar with egg whites until smooth.

  2. Separate icing and add desired colors.
