Mascarpone cheese 226g
Granulated sugar 55g
Heavy cream 136g
Whole eggs 150g
Amaretto liqueur (optional) 70g
Whip mascarpone cheese with granulated sugar until smooth.
Add heavy cream and mix until incorporated.
Add Eggs in 2 increments, and mix on high speed until thick and fluffy.
Mix espresso with the Amaretto liqueur. If you do not want liqueur, you can simply add some sugar to taste for some sweetness.
To assemble, first put a layer of the cream, then dip the ladyfingers in the espresso for a couple of seconds and place them on top of the cream layer. Continue with another layer of cream, ladyfinger, ending with cream on the top layer. Place in refrigerator to set.
When ready to serve, dust a layer of cocoa powder on top.
