No Bake, quick and easy yuzu tofu cheesecake parfait
Graham Crust Ingredients
Graham cracker 65g
Unsalted butter 35g
Gelatin sheet (gold) 4g
Cream cheese (room temperature) 150g
Firm tofu 100g
Heavy cream 85g
Yuzu juice 15g
Granulated sugar 55g
Lemon zest 3.5g (1pc)
For the crust, crush up graham crackers, mix with melted butter, and set aside.
Bloom gelatin sheets in cold water.
With a blender or food processor, blend cream cheese, tofu, heavy cream, yuzu juice, granulated sugar, and lemon zest until smooth.
Squeeze water out of gelatin sheets and melt it in the microwave.
Mix gelatin with filling mixture and then strain it.
Fill the vessel by alternating crumbles and cheesecake mixture, ending with some crumbles on top and some lemon zest.
Place in cooler to set.
Time to TASTE!!!
